Chinese Chilli Mushrooms

Golden battered mushrooms tossed with peppers, spring onions, ginger, garlic and a lively chilli sauce.

Method

  1. Wash and halve the mushrooms. Dice the peppers, slice the spring onions, and chop the ginger and garlic.
  2. Mix the ketchup, chilli sauces, soy sauce and vinegar in a small bowl.
  3. Dust the mushrooms with cornflour. Make a batter with cornflour, plain flour, salt and a little vinegar.
  4. Heat oil, coat the mushroom pieces in batter and fry until golden. Drain them.
  5. In a wok, heat a little oil with sesame oil. Add the peppers, ginger, garlic and dried chillies; stir fry over high heat.
  6. Add the fried mushrooms and sauce. Toss until coated and season to taste.
  7. Finish with the green parts of the spring onions.
